Born in Maracaibo, Venezuela, to a Greek mother and Italian father, Banfi grew up immersed in a rich mix of cultures and flavors that would eventually define her style. By the age of twelve, she was already experimenting with pastry, setting the foundation for a career that would span multiple continents. Over the years, she has honed her skills in acclaimed kitchens in Greece, New York, Dubai, and the UAE, earning a reputation for marrying bold flavors with elegant, refined presentation. Her ability to transform chocolate into an art form, as well as her keen sense for design, was further sharpened through her mentorship with renowned pastry artist Antonio Bachour.

Banfi’s accomplishments extend beyond the kitchen. She founded The Cookie Method, an online pastry and business school that quickly attracted an international following, and her debut cookbook ABC—a playful calendar-style recipe collection—sold out soon after its release. A second book, dedicated entirely to cookies, is currently underway, reaffirming her entrepreneurial spirit and dedication to sharing her craft with a global audience.

In her new role at Waldorf Astoria Doha West Bay, Banfi is tasked with reimagining the hotel’s pastry program across its acclaimed outlets.
