Kolkata, 4th November, 2022 – JW Marriott Kolkata brings the chef of Phulay Bay, a Ritz-Carlton Reserve from Krabi, Thailand for the patrons of Kolkata to savour Southern Thai Cuisine. Phulay Bay, a Ritz-Carlton Reserve is the world’s first property to embody the Reserve brand’s pioneer’s traits, philosophy, and distinct style and design. It presents Chef Laongdao Tohkhot, or “Chef Aong“, the Thai Sous Chef at Phulay Bay, who specialises in the unique cuisine of southern Thailand, with more than two decades of gastronomic experience, she has delighted many guests and dignitaries, including members of the Thai royal family. She also played an important role in showcasing the original cuisine of her homeland to international audiences, both at Phulay Bay and overseas events in China and India.
The Ritz-Carlton Reserve is the brand’s ultra-luxury extension which is distinguished by offering guests’ exotic, hand-selected hideaway destinations globally. Phulay Bay was established in December 2019 and is already one of the first Ritz Carlton Reserve properties in the world. JW Marriott Kolkata and Phulay Bay have collaborated for a Southern Thai pop-up at JW Marriott, Kolkata which is a one-of-a-kind experience for food enthusiasts of the city, to enjoy the best of the thai cuisines which is renowned for its intense flavours. Chef Aong prepares southern Thai seasonal and local foods with extraordinary expertise and attention to detail to produce mouth-watering and incredibly authentic dishes. These dishes include a natural wealth of herbs, fragrant spices, fresh coconuts, and luscious seafood.

The chef’s culinary skills will be reflected in the signature dishes, which includes ‘Crispy Rice Salad’, ‘Grilled Vegetable Satay’, ‘Grilled Chicken Satay’, ‘Royal Thai Pineapple and Orange Cnapes’, ‘Fried Prawn with Vermicilli’, ‘Crispy Shallot Dip Spicy Shrimp Salad’ to name a few. These dishes are served to diners at six to seven specially catered meals on November 4th (Dinner), November 5th (Dinner), and November 6th (Both Lunch and Dinner) at the JW Marriott, Kolkata. The pop-up also offers a wide selection of beverages including cocktails like ‘Sabai Sabai Highball’, ‘Phulaytini, ‘Thai Old-Fashioned’, ‘Bangkok Gin and Tonic’ etc.
