A Culinary Journey from Peru to Dubai
Peruvian-born Chef Jhon Caceres has built a career defined by passion, authenticity, and innovation. A graduate of culinary school, he trained under globally acclaimed chefs Gastón Acurio and Mitsuharu Tsumura, pioneers of modern Peruvian and Nikkei cuisine. His culinary journey spans Argentina, Brazil, and the Middle East, including notable collaborations with Chef Richard Sandoval in Dubai.

At ISSEI, Chef Caceres embraces a philosophy rooted in freshness and authenticity, presenting dishes that seamlessly merge Peruvian tradition with Japanese finesse. From vibrant ceviche to bold Nikkei creations, his cooking reflects both heritage and artistry. “With every plate, we invite our guests to travel to Peru and Japan with just one bite,” says Caceres.
From London Icons to Dubai Horizons
Jake Mackman, a British national raised in Spain, brings more than 15 years of international fine-dining experience. Starting his career at 17 in Spain, he later refined his expertise in London’s iconic venues including The Waldorf Hilton, The Ned by Soho House, and the three-Michelin-starred Sketch in Mayfair.

His journey later led him back to Spain and then to Dubai, where he served as Bar Manager at Claw BBQ, Hilton Dubai Palm Jumeirah, contributing to multiple award wins and operational success. Now stepping into the dual role of Restaurant Manager at ISSEI and Hotel Beverage Manager, Mackman is set to elevate the guest experience with world-class service and a cosmopolitan edge.
