Starting right at the top, he decided to get in his car and experience life on the road. However, fate had a different plan for him when his car broke down. He hailed down a colourful truck that was passing by and asked for a lift.<\/p>\n\n\n\n<p>Back on the road again, our chef soon grew hungry, and asked the truck&#8217;s driver to stop at a good restaurant. Laughing off his suggestion, the truck driver told him not to worry, and that he would show our chef the best roadside eateries along the way.<\/p>\n\n\n\n<p>What followed next was a journey like no other. From the snow-capped mountains of Kashmir to the quiet, coastal life of Kanyakumari \u2014 our chef tasted it all! And what better way to experience the culture of a place than its local cuisine?<\/p>\n\n\n\n<p>Inspired by this magical journey, our chef bid adieu to his trucker friends, thanking them for the rich experience. He returned home brimming with ideas, and thus, NH44 was born!<\/p>\n\n\n\n<p>This specially curated degustation menu has local delicacies that have been given a modern touch through molecular gastronomy, nitrogen freezing, blowtorch roasting and other state-of-the-art techniques.<\/p>\n\n\n\n<p>Start your flavourful journey with the famous Kashmiri&nbsp;<em>Yakhni Shorba<\/em>&nbsp;or a hot bowl of&nbsp;<em>Himalayan Thentuk<\/em>. Bite into&nbsp;<em>Kadagu Yera<\/em>&nbsp;(a South Indian Prawn dish) or&nbsp;<em>Reshmi Kebab<\/em>&nbsp;from the land of the Mughals to get you ready for the main course. Pair rich curries such as&nbsp;<em>Manpaanai Kozhi Thokku<\/em>&nbsp;(Kanyakumari-style chicken curry) and&nbsp;<em>Lyodur Taschaman<\/em>&nbsp;(Kashmiri cottage cheese gravy) with steaming hot rice or a variety of breads. End your meal on a sweet note with some&nbsp;<em>Kesar Thandai Ice Cream<\/em>&nbsp;or&nbsp;<em>Karupatti Halwa<\/em>&nbsp;(a perfect blend of rice flour, palm jaggery and ghee).<\/p>\n\n\n\n<p>Guests can experience this vast and delectable menu from July 5 onwards at J.
