This March, Chef Anil Naudiyal, the Indian specialty chef at&nbsp;<a href=\"https:\/\/www.fourseasons.com\/mumbai\/\" target=\"_blank\" rel=\"noreferrer noopener\">Four Seasons Hotel Mumbai<\/a>, presents the very best of kitchens from across North India \u2013 from Kashmir to Awadh, from the North West Frontier Province to Punjab.<\/p>\n\n\n\n<p>Having spend a major portion of two decades being an ambassador of Indian cuisine at numerous hotels in South East Asia, Chef Naudiyal has recently joined the culinary forces of Four Seasons Hotel Mumbai to fuel an integral pillar of the four major kitchens of&nbsp;<a href=\"https:\/\/www.fourseasons.com\/mumbai\/dining\/restaurants\/san_qi\/\" target=\"_blank\" rel=\"noreferrer noopener\">San:Qi<\/a>&nbsp;\u2013 the Indian kitchen. With an international outlook to the cuisine and an enhanced appreciation for the freshest Indian produce,&nbsp;<em>masalas<\/em>&nbsp;and equipment, he is eager to present this exceptional menu to the city\u2019s most discerning guests.<\/p>\n\n\n\n<p>A humble and soft-spoken person, Chef Naudiyal hails from the Himalayas \u2013 from the state of Himachal Pradesh. In the region, locals are known to have a taste for fish, having access to freshwater trout. He says that it is this affinity for fish that inspired him to select seafood preparations such a\u00a0<em>Nawabi Macchi\u00a0<\/em>and<em>\u00a0Shahi Jhinga,\u00a0<\/em>from the freshest available produce here in Mumbai.
